Summer entertaining with the Vanderbilts Enjoy warm weather sipping with friends and family! At Biltmore, summer entertaining was a favorite pastime for the Vanderbilts and their guests. From birthday parties in the Rose Garden to picnics on the grassy slopes of Mt. Pisgah, warm weather offered the perfect excuse to leave formal dining behind and enjoy a gathering in the great outdoors. Chill, Grill, and Thrill Inspired by their example, here are three easy “chill, grill, and thrill” steps to simplify your summer entertaining whether you’re in the kitchen, on the porch, by the pool—or wherever your plans take you. Chill out with a hearty red wine like our Biltmore Estate Limited Release Malbec and round out the easy meal with a green salad 1) CHILL First, let’s start with an easy recipe for Grilled Skirt Steak with Tomatillo Salsa created by our Biltmore chefs to take advantage of summer’s bumper crop of tomatillos and heirloom tomatoes. Grilled Skirt Steak with Tomatillo Salsa Ingredients 2 pounds trimmed skirt steak (can substitute 4 ribeye steaks)10 fresh tomatillos, husks removed and tomatillos quartered8 cloves fresh garlic3 green onions, roughly chopped1 large shallot, peeled and roughly chopped1 bunch fresh cilantro with stems and leaves1 bunch parsley with stems and leaves1 tablespoon fresh thyme leaves3 tablespoons salt1 tablespoon ground black pepper1 teaspoon crushed red pepper (optional; use to taste)1/4 cup extra virgin olive oilOptional for serving: heirloom tomatoes, quartered; olive oil; fresh lemon juice, salt and pepper to taste MethodThe salsa doubles as a marinade for the steak, so prepare it first by combining tomatillos, garlic, onions, shallot, herbs, seasonings, and olive oil in a blender and blending until smooth. Reserve 1/2 cup of the tomatillo salsa for garnish. Place steak and marinade in a large zip-top bag and allow to marinate for 1–3 hours in the refrigerator. Tips for chilling While chilling the meat, select your favorite wine and chill about 20 minutes prior to serving with the meal. Winemaker Sharon Fenchak recommends serving Biltmore Estate Limited Release Malbec—a rich, fruit-forward red wine featuring intense spice, blueberry, and plum aromas—with this recipe. 2) GRILL Grilled Skirt Steak with Tomatillo Salsa Grill marinated steaks on medium-high heat for 3–5 minutes on each side for medium-rare. When done to your liking, remove steak from the grill and put it on a clean cutting board or platter to rest while you finish the rest of your preparations. Tips for grilling While the grill heats, prepare a green salad to accompany the meal. After the steak is done, split and toast a couple of baguettes on the still-hot grill to serve with the salad (and soak up those heirloom tomato juices). 3) THRILL Enjoy summer sipping and entertaining outdoors with your favorite Biltmore wines Slice the steak and top with reserved salsa. Dress quartered heirloom tomatoes with olive oil, lemon juice, and salt and pepper to taste. Arrange around the steak. Tips for thrilling Bring the entire entrée to the table on the cutting board—no need to transfer to another dish. Use a chiller filled with a mix of ice and water to keep your wine cool, especially if you’re eating outdoors. Behind the Scenes: Sustainability in Our Winemaking Process Posted on April 17, 2019 at 11:49 am.Written by Amy Dangelico In honor of our upcoming harvest season, let’s take a look behind the scenes to understand sustainability in our winemaking at Biltmore. Fall marks the beginning of our winemaking process. During the seasonal harvest, our grapes are hand-picked in the vineyard and brought to the Winery, where their stems are removed. Grapes are picked by hand in Biltmore’s vineyard on the west side of the estate The grapes are then crushed and put in tanks to ferment. Afterwards, our wines are moved into barrels or other tanks to age. Some varieties need six months for aging, while other need up to two years. Finally, our wines are blended, bottled, and sealed. The process is a delicate balance of art and science. And if you take a glimpse behind the scenes, you’ll find that our efforts are geared towards more than just crafting award-winning wines. We also strive for environmental stewardship and sustainability in winemaking, every step of the way. Composting grapes We combine all remaining parts of the grapes—skins, seeds, and even the woody stems—with recycled plants and other organic matter at our large compost site. About once a year, after being turned regularly, the finished compost is used as fertilizer in our gardens as well as our field crops, which serve as food plots for wildlife on the estate. Repurposing barrels Once our Winery can no longer use its wine barrels, made of French, American, and Hungarian oak blends, they are repurposed across the estate in a variety of ways. For instance, many wine barrels end up at A Gardener’s Place shop to be used as decorative holders for estate-grown plants. Some barrels are used to create rustic-style bars for outdoor Winery events, while others find their way into Village Hotel on Biltmore Estate and The Kitchen Café to be used as towel containers and trash cans. “Almost all of the businesses on the property have repurposed a barrel at one time or another,” says Biltmore winemaker Sharon Fenchak. Recycling corks A wine barrel repurposed for recycling corks In addition to recycling the usual materials—cardboard, plastic, glass, paper, and steel—the Winery recycles wine corks. Natural corks, as opposed to screw caps and synthetic corks, are the most sustainable wine closure on the market. Cork is a renewable and biodegradable material harvested through an environmentally friendly process. We have partnered with Widget Co., a parent company of Cork Club to help educate the public on the importance of using and recycling natural corks. Seasonal spring wine release For 2019, Sharon has created a fragrant white wine that opens with a scented bouquet of tropical fruit, coconut, pineapple, vanilla, and clove. “As you sip, you’ll experience tastes of rich tropical fruit with a complex body,” said Jill Whitfield, senior marketing manager for Biltmore Wines. “The wine has a smooth, balanced finish and mild acidity, so it’s perfect for pairing with your favorite warm weather fare and outdoor picnics.” To complement this year’s wine, the label features original artwork of Biltmore’s iconic Winery clock tower. Bryan Koontz of Asheville, North Carolina—the same artist who created both our stunning 2018 Christmas at Biltmore wine labels—was selected to paint a scene that echoes the beautiful blossoms of our annual Biltmore Blooms celebration. Let’s take a look at the process for creating a commemorative label: “We initially asked Bryan to present several concepts for the label,” Jill said. “He offered four options of the Winery’s clock tower showing different angles and perspectives, and we talked through each one, narrowing the choices down to a pair of sketches.” The original four concept sketches Bryan Koontz presented for the 2019 spring wine label Back to the drawing board Bryan went back to the drawing board–literally–and worked the two sketches selected by Biltmore Wines and Lisa Vogel, art director, into more refined pencil drawings. Bryan’s two drawings in the process of being refined Interpreting the season “We’ve worked with Bryan on several wine label projects,” noted Lisa, “and he is always able to quickly grasp the tone and manner that we need for a certain season or type of wine and to interpret it into a beautiful piece of art.” Bringing the drawings to life with vibrant watercolors All in the details “We loved both versions of Bryan’s vivid watercolor paintings,” said Jill, “and it was hard to choose between them. From classic favorites to special blends, Biltmore handcrafts a wide range of award-winning wines. Let’s take a look at some of the more unique varietals we offer. Viognier Although its roots are firmly planted in southern France, this white varietal is now grown around the globe—as long as the climate offers warm weather for growing and cool nights to protect Viognier’s moderate acidity. Our new Biltmore Estate Albariño makes any occasion seem special! “As soon as you uncork our Viognier, you can almost imagine that it’s a delicate perfume,” said Jill Whitfield, senior marketing manager for Biltmore Wines. “It offers top notes of tangerine, peach, and honeysuckle.” Based on variables ranging from the terroir of a vineyard to production and aging, Viognier can be lighter with more hints of fruits and flowers, or deeper and creamier with flavors of vanilla and spice. “Viognier offers a definite aromatic sweetness,” Jill said, “but don’t be fooled into thinking it’s a sweet wine. Our Biltmore Reserve Viognier 2021, handcrafted from North Carolina-grown grapes, adds a bright twist to its overall bouquet. Good balance and acidity make it an excellent choice with seafood.” Tempranillo Tempranillo is a great way to spice up your wine selections Most of the world’s Tempranillo is grown in Spain where it is believed to have originated, but this earthy red wine is rapidly gaining a following around the globe. “Tempranillo has a lot of personality,” said Jill. “Ours is full-bodied and fruit-forward with earthy aromas, rich dried fig flavors, and lingering tannins—just what you’d expect in a classic barrel-aged version.” Winemaker Sharon Fenchak carefully crafts Biltmore Estate Limited Release Tempranillo with grapes sourced from our partner vineyards in California. “When I discover exceptional grapes from one of our west coast growers, it inspires me to create distinctive wines for our Limited Release series,” Sharon said. “It’s usually a smaller amount of fruit, and that gives my production team an opportunity to really bring out the qualities of the varietal.” Because of its fuller body and savory qualities, our Limited Release Tempranillo is a hearty match for beef, lamb curry, and pork. It was recently rated “Exceptional” and awarded 91 points and a gold medal by Tastings.com, an online publication of the Beverage Testing Institute. Chenin Blanc Pack plenty of Limited Release Semillon for your next summer picnic! One of our guests’ favorites and a best-seller at Biltmore’s Winery, Chenin Blanc is a versatile white wine that can range from lightly sweet to quite dry, depending on the vintage and the style of winemaking. “We handcraft our Chenin Blanc in two different styles,” said Jill. “Our Biltmore Estate Limited Release Chenin Blanc reflects the sweetness of the grape, which is very popular in the Winery’s Tasting Room. With floral aromas and a lingering sweet finish, guests can easily imagine sipping at home on a warm evening.” Although our Biltmore Estate Chenin Blanc also features the classic floral aromas you’d expect in this varietal, it’s a bit more crisp than the Limited Release version and offers flavors of wild strawberry and bright hints of lime. “Both styles are delicious,” noted Jill, “and I call them my ‘secret weapons’ when it comes to pairing wine with sweet-and-sour dishes and Asian cuisine! Those are not easy flavors to complement, but our Chenin Blanc and our Limited Release Chenin Blanc have enough acidity and sweetness to make it work.” Enjoy Biltmore wine on the estate and at home. Wings of Delight: Mariporta Red Dessert Wine Posted on January 7, 2019 at 12:00 am.Written by Jean Sexton In honor of our new exhibition A Vanderbilt House Party – The Gilded Age, winemaker Sharon Fenchak has handcrafted Mariporta—a dazzling red dessert wine that reflects the fine vintages that George and Edith Vanderbilt would have offered their guests. Biltmore winemaker Sharon Fenchak Careful coaxing “The starting point for Mariporta was an outstanding Petit Sirah that we blended with other varietals,” said Sharon. “We carefully coaxed all the rich layers from the wine as it matured in oak.” Designed to delight “Our velvety and barrel-aged Mariporta is exceptionally jammy and fruit-forward. Pair it with your favorite dessert, or simply serve it as dessert!” Sharon suggested. In addition to the richly rewarding flavor of the wine, the label is a flight of fancy also inspired by A Vanderbilt House Party.Florence Vanderbilt Twombly in her inspiring gown Flight of fancy “For the exhibition, we reproduced a stunning gown worn by Florence Vanderbilt Twombly—one of George Vanderbilt’s sisters,” said Leslie Klingner, Curator of Interpretation. “The original dress of finely woven silk was designed by House of Worth and adorned with embroidered butterflies and hand-sewn beadwork. Drawing on this description of the dress and an archival photo of Florence Twombly wearing it, Lisa Vogel, Art Director, created a remarkable design that echoes the delicate winged details of the gown. Re-creation of the butterfly gown “In keeping with the style of the label, the name Mariporta flutters between the Spanish word for butterfly and the expressive style of this elegant red dessert wine,” said Lisa. Crowdsourcing Our 2018 Christmas Wine Labels Posted on October 16, 2018 at 12:00 am.Written by Karina Hux Ready to pour on the cheer this holiday season? Nothing says “Christmas” like the festive labels on each bottle of our Christmas at Biltmore wine! “In previous years, we held a competition for artists to share their interpretation of what Christmas at Biltmore means to them,” said Jill Whitfield, Wine Marketing Manager. “We chose several finalists, then asked our online audience to vote for their favorite design.” Shaking it up For 2018, Biltmore Wines decided to shake things up a bit. Instead of asking artists to submit their work, they asked our Facebook followers to help them develop this year’s Christmas wine labels, one step at a time. Step one “First, we worked with Biltmore’s art team to create a pair of mood boards,” Jill explained. “One featured #Natural elements (a celebration of the natural side of Christmas with warm vintage details and rustic textures inspired by the organic beauty of the great outdoors); the other was #Splendor (setting a splendid tone for the holiday season with dazzling displays of lustrous lights, glamorous metallic elements, and hints of pure opulence). We then posted them on Facebook and asked our fans and followers to vote for their favorite mood.” Mood board featuring natural elements Step two For the second phase of voting, Lisa Vogel, Art Director, created two more collections so voters could choose between themes representing a daytime mood with sunshine and outdoor activities and a twilight theme in which you might see woodland animals come out to play. Facebook fans were up for the challenge, but made it clear they liked both mood boards. The artist begins sketching label designs “Our plan was to have Asheville artist Bryan Koontz take inspiration from the winning elements and create an original painting based on them,” said Lisa, “but it quickly became obvious that voters didn’t want to choose just one design Round two of Facebook voting featured #Daytime and #Starlight options And the winner of this years Christmas wine labels is… What happened next? “We paid attention to all the votes and all the comments,” Jill said, “and decided to produce two Christmas at Biltmore wines!” Lucky for Biltmore and our online voters, Bryan was happy to double his workload and paint not one but two pieces of art that would become the 2018 Christmas wine labels.
