The sparkling wine will be offered during the hors d' oeuvre course to complement such dishes as duck confit and toasted pumpkin seed lollipops, hot-smoked salmon firecrackers, and venison terrine with fig compote. This holiday meal is sponsored by The James Beard Foundation whose mission is to celebrate, preserve, and nurture America's culinary heritage and diversity in order to elevate the appreciation of our culinary excellence. Anointed the "dean of American cookery" by the New York Times in 1954, James Beard laid the groundwork for the food revolution that has put America at the forefront of global gastronomy.
